Blueberry Biscuits

Lately, I’ve been having so much fun practicing making buttermilk biscuits. One morning, I decided to do something different. I was inspired by our family’s favorite place to get these biscuits. They are packed with lots of blueberries, covered in warm icing; leaving you feel guilty and good at the same time.

They are great to make before the work-week for a grab-n-go breakfast or a nice weekend treat to change things up a bit. 🙂 Below is the recipe. I hope you get to try this and if you do let me know how they came out.


Blueberry Biscuits


  • 2 cups self-rising flour + more for flouring board and cutter
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • ¼ cup vegetable shortening, plus more for greasing pan
  • ¾ cup buttermilk *Tip: if you do not have buttermilk, combine together 1 cup of whole milk and 1 tablespoon of white vinegar
  • 1 cup blueberries, fresh or frozen, thawed
  • 1/2 teaspoon lemon juice


Preheat oven to 350º F. Lightly coat rimmed baking sheet or cast iron skillet with vegetable shortening. Set aside.

In a small bowl, add blueberries and lemon juice and set aside.

Add flour, salt, sugar to a large mixing bowl. Cut in shortening with a pastry blender or two forks until well-combined. Mix in the blueberries. Slowly pour in buttermilk and stir gently until just combined. Very important: Do not over-mix. Dough will be sticky. That’s ok.

Pour biscuit dough onto a floured countertop or dough board. Gently pat to about ½-inch thick. Do not work the dough too much. Cut out biscuits using about a 2-inch biscuit cutter. Place biscuits into skillet or on baking sheet pan, leaving about an inch between biscuits to allow them to rise and cook fully. Place in preheated oven and bake about 30 minutes or until biscuits are lightly golden on top.

Once biscuits are done, remove from skillet to cool for just a bit and serve with icing.


  • 1 cup powdered sugar
  • 2 tablespoons water
  • 1/4 teaspoon vanilla

Mix all ingredients in a small bowl until well incorporated.
